A “good” day for raw eating today. I made an awesome “cheesecake” for dinner. That link will take you to the recipe. It’s amazing how the middle layer tastes so cheesecakey, considering the main ingredient is cashews. I used fresh blueberries for the topping.
And yesterday, dinner was nori rollups. I soaked some sunflower seeds for a few hours, drained them and whizzed them in the food processor with some carrot, red pepper, Braggs and lemon juice to make a pâté. I filled nori sheets with some of this mixture, cucumber and pepper sticks, grated beets and salad greens.
